After a spectacular three-year run for Sud Italia, Shanon Scott’s ode to the foodways of Southern Italy, the Houston restaurateur has turned his gaze northward to the capital: Rome or Roma (ROH-mah) in Italian. “I wanted to create a casual dining experience for Houstonians,” says Shanon, “and the natural inspiration for that was Rome’s wonderful trattorias.”
“Here at Roma, we’ve created a menu centered around the Roman classics like the pasta trinity — carbonara, amatricana, and cacio e pepe. But the departure from southern Italian cooking has also allowed Shanon to include other Italian greats like osso buco and braised lamb shank.
His wine list has also evolved: It now features the three Italian big reds: Barolo, Barbaresco, and Brunello, as well as favorites from Tuscany like Chianti and Super Tuscan blends of Cabernet Sauvignon and Merlot.
