Exceptional. Will for sure stay...

Liked: The staff was exceptionally helpful and the beds and pillows were so comfortable--so much so that we looked at the tags to order the pillows! The food was also delicious.
Disliked: Only one elevator was working while we were there, so there were a couple of times we had to wait for awhile for the elevator.

Overall a very good experience...

Liked: We didn't eat the breakfast but the dinners we had were very good. The location was great and the transportation to the airport and pricing was a plus and the reason we picked to stay there. We arrived early and we were able to get a room. The staff were pleasant, from the drivers ,bar tender, and front desk personal.
Disliked: I didn't find the pillows or bed very comfortable. They seemed to be a little hard to me.

Comfortable but don’t expect anything...

Liked: The bed was comfortable. The room was clean, and the location was convenient to the airport.
Disliked: When I think Hyatt Regency, I think of a hotel that has all of the amenities. This hotel reminded me more of a Hampton Inn with conference space. The selection at the breakfast restaurant is very basic and surprisingly they served french fries when the menu said breakfast potatoes! Although this is an airport hotel that is basically across the street from the airport, it took 25 minutes for a hotel shuttle to arrive to pick me up after I called them. Their pantry where you can buy snacks was out of many items, and although the menu said that there were several varieties of good ice cream all they had were bluebell ice cream sandwiches. There is nothing other than a coffee shop within walking distance so you do need to Uber to get to any restaurants or to the mall of America. Not bad for an overnight stay, but not what a hotel with a luxurious name like Hyatt Regency should be.
