With French and European cuisine holding a heavy influence, Executive Chef Benjamin Lacy and Pastry Chef Ryan Boya have developed a seasonally driven and forward-thinking menu. Offering a four-course menu, Chef Ben and Chef Ryan analyze their dishes from seed to plate, considering the biology and harvesting of each component. The resulting menu goes beyond merely impressing guests, redefining the very idea of dining.
Inspired by classic libations, yet executed in an uber-contemporary style, Bar Director Tenzin Samdo’s self-described “nerdy” approach to cocktails guides an awe-inspiring bar program with global flavors and innovative techniques. Tenzin names his cocktails after endangered species and the altitudes they inhabit—higher altitudes mean spirit-forward drinks—combining ArtScience’s thread of learning with its scientific and sustainability initiatives.
