At the junction between the Mandalay Bay casino and Mandalay Place shopping area, two separate kitchens and staffs prepare food for the restaurants, both featuring separate menus. Chef Rick Moonen's downstairs, casual dining, R bar caf, is directly below the reputable the fine dining RM Seafood. The concept of two restaurants sharing one space originated in New York and the beautiful structure is designed by San Francisco architect Cass Calder Smith of CCS-Architecture. R bar caf features an outdoor dining area (still enclosed in the Mandalay Bay shops), a bar area, lounge area and - one of the few in Las Vegas, a Raw Bar. There's also a separate private dining area blocked off from the rest of the cafe by large curtains and a dining room with mahogany wood tables. The upstairs fine dining restaurant, RM Seafood (also on Restaurant.com), seats 85 and contains a lounge and two private dining rooms featuring tasting menus and la carte dining. Each concept offers different wines, entrees, desserts and specialty drinks.

"The cafe menu is good old American seafood," says Moonen, who personally selected the beers to pair with the seafood dishes. "It's more comfort food."

Following are items from the R bar cafe menu:
o Starters: Raw Bar featuring oysters on the half shell, oyster shooters; Pacific white shrimp; littleneck clams; one-pound Maine lobster; Dungeness crab; and seafood antipasto.
From the Biscuit Bar, warm seafood veloutes on cream biscuits with a choice of toppings including blue crab; rock shrimp and Maine lobster.

o Soups and salads: Rick's clam chowder, red or white; spicy Bermuda shrimp soup; old-fashioned chicken soup; RM seafood salad; hearts of romaine Caesars salad (shrimp optional); chopped salad with cucumbers, red onion, olives and feta; roasted Bosc pears.
